Probably only of interest to me since most people would just follow the sort of recipe you get by googling "beef pumpkin curry". But since I either can't eat or didn't have most of the ingredients for those I made this instead :)
Twoish serves, quantities what you'd expect.
Cook minced onion, garlic and ginger, put aside.
Brown beef cubes mixed with tumeric, coriander, sumac, pepper, salt.
Mix back in onions etc, add 2 tb tomato paste, 2 dates, fresh coriander, fresh basil, beef stock, and a few dashes of fish sauce. Add pumpkin.
Simmer for ages. Add some peas. Simmer a bit more.
Eat with rye bread.
(It was basically a Thai beef and pumpkin curry minus all the stuff I can't eat until I tasted it and went "This needs citrusiness" and sumac was the closest thing I had, and once I added that I decided I might as well go for dates too to add some sweetness. And then I couldn't be bothered making rice)
