So I just cut myself some of the bread I made earlier today and it's undercooked :( Mostly done, but a few mushy dough bits in the middle. Thanks to a mistake with temperatures it's a little overcooked on the outside so I don't want to bake it again (also it's cut now!)

Any clever suggestions on what to do with it? It's very nice bread otherwise, pumpkin spice with treacle.

Microwaving worked adequately, I guess, but it went a bit mushy. Toasting wasn't very effective. I guess I could make some sort of oven baked..thing (I don't think garlic bread would work with this bread!) Maybe bread and butter pudding.

Also googling "undercooked bread" found me a few other pumpkin/carrot breads(*), is this always going to be an issue? I did screw up the temperature (fan forced instead of regular), but not that much. Maybe I should make a smaller loaf next time.

EDIT: OOps, meant to post this to [livejournal.com profile] cooking. Well, if you guys have any ideas.... :D

(*)The only success story was cutting off the cooked bits then steaming the rest in the oven which I might try.

Undercooked bread/cake when it contains vegtable matter is a common problem. If it happens to me, I like to remove the bits that are done as per success story, grease an ovenproof container lightly with butter or olive oil and pop in the undercooked bit. Try to find an oven dish that's about the right size - I use a pyrex bowl usually and it works a treat. Cover it if it's got a lid, or just pop on some alfoil.

What you want to do is bake it at a lower temperature than usual, say... 160 degrees odd, and let it cook for about 10-20 mins with the covering on, and then for a further 10-15 mins with the cover off to crisp up the outside. Sorry about the vague times, I just don't know the consistency or cookedness - kinda just have to wing it I guess :)

Stick a pudding under slices of it? Pumpkin and treacle bread and butter pudding... Might work...

Bread and butter pudding! It's really tasty and requires more cooking so should finish off the doughy bits.

Hrm, fair points all. I had a fantastic few weeks in Perth over xmas with my girlfriend's family. Have to admit I didn't eat many baked goods. (Although lots and lots of bbq'd ones... ;D )
