Samurai Love Ballad: Radiance Prologue

The protagonist of the Radiance routes is a cook/maid, and the love interests are real historical samurai/warlords, except for Saizo who is a ninja from folklore.
(Sorry for this showing up now, I'm rejigging my guide to be clearer and have all the characters)
Prologue:
MC works in her widowed mother's restaurant in Kyoto. She encounters each of the love interests briefly as customers etc. She also has a cute little brother and Hot Male Childhood Friend Off To The War. There's a creepy magistrate trying to marry her but she Will Only Marry For Love (which everyone else thinks is very impractical)
Magistrate: Your little brother is going to be pampered at my lord's right hand...tasting all his food :D
Me: As a sex slave??
MC: OH NO A FOOD TASTER HE'LL GET POISONED AND DIE
Me: Ohhhh >.>
And so she dresses as a man, and goes to save her brother's life by taking his place. But WHICH CLAN WILL I CHOOSE???
Love Interests:
I wasn't sure this would be my jam (there's no magic or time travel or anything) butwaterscroll made it sound interesting and it's free. There's AUTOPLAY and TEXT SIZE ADJUSTMENT which is rare in a phone game, especially a translated one, go you, Voltage.
I didn't get much of a sense of each dude in the like 3 lines they got each in the prologue. But I get a bit more info in the choice screen. Each clan has two love interests in it, and each love interest has a profile. Which lists birthday but not age haha, guess that lets them gloss over how they wouldn't all have been cute dateable bishie age in whatever year this is set. I can't get the voices to play ;_;
Each profile has comments from people who know them. Most of the comments are just what a great leader/warrior they are, which I feel is implied by the premise of the game. I've listed the people who give comments even if the comments were too boring to mention, since it'll help me keep track of all the relationships.
Group 1:
The Light of Honour Akechi Mitsuhide: Kind to a fault.
His boss Oda Nobunaga describes him as "So earnest it's annoying, but he has his uses"
Retainer Niwa Nagahide says "he's dedicated but I think I saw him drawing a cat"
The Devil's Hand Oda Nobunaga: Cold and ruthless.
His page Mari Ranmaru says he's misunderstood.
His sister Oichi says he's kind.
Group 2:
The Sword of Japan Sanada Yukimura: Seems to be shy around women??

The Archer of Tokai Tokugawa Ieyasu: Manipulative and unforgiving. Boyishly cute, which is especially weird after Demon's Bond haha.

The Fox of Sawayama Ishida Mitsunari: Intelligent, venom-tongued, blindly loyal to Ieyasu, has a devastating secret.

Group 6:
The Tiger of Kai Takeda Shingen: a weakness he can show to no man.

Nobunaga: An asshole.
Mitsuhide: a sweetie with an understated route
Hideyoshi: Entertaining but horrifying
Mitsunari: Emotionally complicated and arguably genderqueer
