A while ago
lilysea very kindly gave my list of food intolerances to to a raw, vegan, gluten free etc cafe in Freo to see if there was anything they could do with it. They offered three things: caramelised buckwheat cereal, which was not my sort of thing but nice enough, some sodium alginate noodles which my brain refused to believe were food, and a very nice herb-and-spice avocado soup which I discovered made an excellent pasta sauce.
So, today I tried to recreate it, with mixed success. I doubt this is of much use to other people (it's definitely not vegan!) but you never know.
Fry meat (in my case turkey)
Blend with food processor:
a handful each of onion, parsley, basil, and fresh coriander, peas
About 1/4 cup of chicken stock
1 small avocado
1 clove of garlic
Healthy shake of tumeric, dried coriander, dried ginger
lots of salt and pepper
A dash of soy sauce
When meat is browned, add sauce and simmer.
Boil and drain pasta. Mix. Serve.
The peas were a mistake. Overall it needed to be smoother and probably cooked a little longer (except the turkey which needed to be cooked less) It needed more garlic (I tend to be stingy with it since too much makes me ill), more basil, maybe some thyme, perhaps celery (celery leaves?). Still, while the texture was far from ideal the flavour was ok.
And of course NOW it occurs to me to look up avocado and herb soups online...
