A strange sort of hot dish

Ingredients:
250gish low fat beef mince
1Tbish chopped onion
1Tbish mushroom
maybe half a cup of chicken and corn soup (the only soup I could find that I could eat)
a cup maybe mashed potato
Preheat oven to 180C. Get a 20cmish diameter flat bottomed casserole dish.
Mix mince with the onion and mushroom, put at the bottom of the dish.
Spread over a layer of soup, and then potato. Add lots of salt and pepper every stage.
Bake maybe 20 mins, then 10 minutes at a higher temperature.
Discover is a bit bland, add more salt and Worcestershire sauce.

It was actually pretty tasty, and less effort than shephards pie. I think next time I'd add garlic powder and dried herbs, and put the Worcestershire sauce in the soup. I think the mushrooms added something to the flavour, not sure the onion did much. I'm not sure if it would work with spinach, as is it's kind of low on greens.

Date: 2010-04-19 03:23 am (UTC)I made it again last night with mushroom and onion gravy which worked pretty well. I think I'm slowly heading towards just making shephards pie with mushrooms, corn and chicken stock instead of carrot, peas and beef stock :D

Date: 2010-04-20 08:08 am (UTC)The tater-tot thing sounds a bit scary, but I could see I could stick grated potato instead of mashed on what you describe, and some frozen peas and corn, and perhaps grated cheese onna top.
