Strawberry peanut butter chicken salad
Dec. 14th, 2009 05:11 pmYou heard me. Adapted from lots of places to fit my diet and what I had to hand. Googling "Chicken strawberry pasta salad" will provide recipes likely better suited to anyone who isn't me.
Salad:
Poached chicken (poaching chicken ftw. Low fat! Easy! Creates large quantities AND makes stock!)
Pasta spirals or similar
a few chopped strawberries
lots of chopped celery (spinach or lettuce would probably work too)
some boiled eggs (I'm not sure these added much)
Dressing:
peanut butter
miso paste
honey
finely chopped garlic, ginger, and red onion
A dash of the poaching stock
a little bit of coriander
salt and pepper
There was just enough ingredients that I associate with desert to make my brain very confused but it was quite nice (then again I LOVE the combination of peanut butter, sugar, and ginger). The recipes I looked at all contained some sort of oil, vinegar/dressing, and nuts. I can't have the first two and had none of the third, but I think they would all add to the flavour.
